Ingredients:

  • 1 cup cooked quinoa

  • ½ cup roasted chickpeas

  • 1 cup steamed broccoli florets

  • ½ cup cherry tomatoes, halved

  • ½ cup diced cucumber

  • 2 tbsp feta cheese

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt & pepper to taste

Instructions:
